Recipe: HOME-MADE GOJI GRANOLA

Serves 4.

1 cup organic rolled oats

¼ cup organic chopped almonds

¼ cup organic chopped pecans

3 tbsp mixed seeds (ideally pumpkin, flax & sunflower seeds)

3 tbsp goji berries

2 tbsp melted coconut oil or macadamia nut oil

Optional extras:
Organic manuka honey.

Method

Preheat the oven to 160 degrees Celsius.

Add the oats, nuts, seeds and melted coconut/macadamia nut oil to a bowl and mix well.

Line a baking tray with greaseproof paper, place oat mixture on the tray and bake for 5-7 minutes until toasted and golden brown.

Take out of the oven and add the cinnamon and goji berries.

Mix well, allow to cool.

Granola will keep for 2 weeks in an airtight jar.

Serve with coconut yoghurt, plant milk or fruits of your choice.
