BANANA & GOJI LOAF 
WITH WALNUT BANANA N’ICE CREAM

Serves 4-6 GF

2 ripe bananas + 1 to decorate

2 tbsp goji berries

200g buckwheat flour

50g coconut oil

150ml plant milk 

1 tbsp ground flaxseed

2 tsp ground cinnamon

1 tbsp mixed spice

1 tbsp baking powder

1 tbsp vanilla

0.5 tbsp apple cider vinegar

Method

Preheat the oven to 180 degrees Celsius.

Start by making the flax egg – add 1 tbsp ground flax seeds to a bowl and add 2.5 tbsp cold water, leave to thicken.

In a separate bowl, mash the bananas with a fork, add the oil, plant milk, flax egg, vanilla and vinegar.
Add the buckwheat flour, cinnamon, goji berries and baking power to the wet ingredients and mix until incorporated.

Grease a loaf tin and pour in the cake batter, decorate with sliced banana and bake for 20-25 minutes until a knife comes out clean.

Serve with Banana N’ice cream.
