Recipe: CREAMY CASHEW SPAGHETTI

Serves 4. GF

150g (1½ cups) cashew nuts

4 tbsp nutritional yeast

2-3 garlic cloves

½ lemon juice

1 tsp bouillon stock powder

1 cup plant milk
300g brown spaghetti
300g mushrooms

Method

Soak the cashews for 2-3 hours (or quick soak in boiling water for 1 hour).

Drain and rinse the cashews and place in a blender with the remaining ingredients.

Blend until smooth and creamy.

Serve with spaghetti and garlic fried mushrooms.
